A simple, yet very very tasty pasta. During the spring, all the abundance of wild foods got me bouncing off the walls. I am constantly amazed at how much food there is around us in the form of wild foods; cleavers, nettles, dandelions, wild garlic, edible flowers, plantain, yarrow etc. Thankyou Mother Earth! Pasta (serves 2-3)
2 spirallized courgettes
Sauce
1 avocado
bunch wild garlic chopped
1 tbs organic virgin olive oil
1 tbs lemon juice
1 tbs apple cider vinger
pinch of good sea salt
sprinkling of shelled hemp seeds
Blend the sauce ingredients and drizzle over pasta. Sprinkle the hemp seeds on top. You can also add sprouts if you would like some crunch. Yummy!
